Blossom honey usually has a light colour, lighter than thyme honey, while its taste is not always the same. It depends entirely on the variety of blossoms from which the bee collected it. Depending on the flowering, our little bees create a different honey for us each year!

Blossom honey stands out for its delicate, floral taste and its light colour. It is the mildest of our honeys and suits everyday use — at breakfast, in drinks and in baking.

Blossom honey is an ideal substitute for sugar, both in confectionery and in daily nutrition. Due to its high sugar content, blossom honey crystallises very quickly, within 6 to 18 months.

In general, blossom honey can be considered the easiest to produce, since the variety of plants from which the bee can gather honey is so great that each year beekeepers have sufficient quantities to supply the market. By contrast, single-variety honeys (such as thyme honey) are produced in much smaller quantities.

Blossom honey is usually produced between April and August.
