
Christmas turkey with honey
Ingredients:
2 cups basmati rice
500 g turkey breast
½ cup oil
1 large dry onion, finely chopped
½ cup pine nuts
1 wine glass of cognac
1 ½ cups (or as much as we like)
chestnuts boiled or roasted and coarsely chopped
½ cup golden raisins
1 heaping tablespoon of honey
salt, fresh pepper
Method:
In salted water, boil the rice according to the instructions on the packet. If there is water, we strain it and let it cool very well. We cut the turkey into small pieces (as if for a kebab) and sauté them in the oil that we have heated in the wok or in a deep pan, so that they brown a little. We add the onion to the turkey until it turns golden and at the end we also add the pine nuts and stir.
We deglaze with the cognac, lower the heat and wait for it to be absorbed. We add the chestnuts and the rice and stir well. At the end, we add the raisins and the honey and turn with a wooden spoon so that it melts into the food and spreads everywhere. We serve with freshly ground pepper on top.
