
Prawns with honey and herbs

Ingredients for 4 servings:
- 600 g large prawns, unpeeled
- 1 cup warm water
- 1 tbsp sea salt
- 4 tbsp honey
- 2 cups ice cubes
- 3 tbsp red vinegar
- ¼ cup olive oil
- ¼ cup finely chopped parsley
- 3 tbsp finely chopped onion
- 2 tbsp finely chopped fresh oregano
- 2 cloves garlic, crushed

Method:
- Remove the heads from the prawns, but keep the tail and the shell.
- In a large bowl add the warm water, the salt, 2 tbsp honey and stir until the salt dissolves.
- Then add the ice cubes and leave until the mixture cools down. Add the prawns and leave for 20 min.
- Remove the prawns from the bowl and drain well so that all the water runs off.
- Preheat the grill to 160o C.
- In another bowl add the vinegar, the other 2 tbsp honey and stir until these two ingredients combine. Gradually add the olive oil, stirring continuously.
- Then add the parsley, the oregano, the onion and the garlic. Stir well until the ingredients combine.
- Place the prawns on a baking tray after spraying it with olive oil spray. Leave them uncovered for 2–3 min on each side or until they take on a light orange colour.
- Add the prawns to the bowl with the vinegar mixture for 2 minutes and then serve.
A few words about prawns… Prawns are a product that can be cooked in various ways, as long as the right and nutritious combinations are made. To make it a complete meal you can accompany it with wholemeal pasta or brown rice. Prawns offer many nutrients and a delicate, sweet taste that pairs beautifully with honey.
