Stuffed sweet potatoes with honey, for a sweet dose of love at the lovers’ dinner!
Ingredients for the sweet potatoes:4 sweet potatoes (medium-sized)1/2 cup raisins1/2 cup finely chopped walnuts150 g feta or goat cheese, crumbled1/4 cup fresh parsley, finely choppedSalt and pepper

Try the stuffed sweet potatoes with honey and you’ll remember us!
- Preheat the oven to 200°C.
- Wash and pierce the sweet potatoes with a fork. Place them on a baking tray and bake in the oven for about 45–60 minutes or until they soften.
- The baking time depends on their size (check by piercing with a fork).
- While baking, prepare the filling. In a bowl, mix the raisins, walnuts, feta or goat cheese, fresh parsley, salt and pepper. Mix well.
- Once the sweet potatoes are ready, cut them lengthwise and carefully remove their flesh, leaving a margin at the edges.
- Keep their skin to fill them afterwards.
- Add the flesh to the filling mixture. Mix until it becomes uniform.
- Then fill the sweet potatoes with the filling.
Preparing the honey glaze
- In a small saucepan, put the honey, olive oil, Dijon mustard, balsamic vinegar, salt and pepper. Stir and heat over low heat until warmed.
- Pour the honey glaze over the sweet potatoes.
- Bake the sweet potatoes in the oven for an additional 10–15 minutes.
Remove from the oven and garnish with extra fresh parsley if you wish and serve immediately.

Ingredients: 800 g pork Tenderloin 2 tbsp balsamic vinegar 1 tbsp soya sauce 1 tbsp olive oil 1 tsp dried thyme Salt and pepper
- In a small bowl, mix together the balsamic vinegar, soya sauce, olive oil, dried thyme, salt and pepper.
- Place the tenderloin in a baking tray and brush the balsamic glaze all over the surface.
- Bake in the oven for 25–30 minutes.
- Let the tenderloin rest for a few minutes and slice. Serve together with the Sweet Potatoes with Honey and enjoy.
TIP: Pair with white wine, Chardonnay, Viognier or Riesling!
