Cake with honey and oats

Cake with honey and oats, because as you will have understood we adore healthy sweets. The ones that can excite you with their flavour, become addictive, disappear in the blink of an eye, but without all the guilt that usually accompanies them. One such sweet is today’s cake, which will be loved by children and adults alike. Try my recipe, it is below.

Ingredients

  • 1 cup oats
  • 1 cup buttermilk
  • ½ cup corn oil
  • 1 large egg
  • 1 vanilla
  • 2/3 of a cup honey
  • ½ cup all-purpose flour
  • ½ cup wholemeal flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • A pinch of salt
  • 1 tablespoon cinnamon
  • 1/3 of a cup spoon sweet of our choice, drained from its syrup and finely chopped (I used little fig)

Steps

Step 1

We soak the oats in the buttermilk for half an hour. In the meantime we preheat the oven to 180 C and lightly grease a cake tin.

Step 2

We put the egg into the mixer bowl and beat it well. We add the oil, the honey, the vanilla, and the oat mixture, and we continue beating.

Step 3

Then we add the rest of the ingredients one by one, except for the spoon sweet, and once the mixture is well combined we take the bowl down from the mixer. We pour in the spoon sweet and stir with a ladle. We transfer it into the cake tin and spread it out evenly.

Step 4

We bake for 30 minutes, or until the toothpick we dip into the cake to test the baking comes out dry. We let it cool, unmould it, and cut it into pieces to serve.
