
Loukoumades with honey
Ingredients:
• 500 g Flour
• 1 sachet yeast
• 1 tsp salt
• 1 teacup lukewarm water
• olive oil for frying
For the syrup:
• 400 g Oros Machaira honey
• 100 ml water
For the sprinkling:
Cinnamon, Sesame
Method:
Mix the flour with the salt in a large bowl and add the yeast, after first dissolving it in a little lukewarm water, and stir lightly. Add a little more lukewarm water, so that it becomes a medium batter (neither too runny nor too thick).
Beat the mixture very well with an egg whisk, until all the ingredients combine. Put the batter in a warm place and leave it to rise. When the dough forms bubbles, it means it is ready.
Put the olive oil in a frying pan or a deep pot to heat well. With a wet spoon take the mixture spoonful by spoonful and drop it into the hot oil. When the loukoumades puff up and turn golden-brown on all sides, place them on absorbent paper so that they drain.
Prepare the syrup by heating and stirring the honey with the water. Serve the loukoumades hot, sprinkled with sesame, cinnamon and drizzled with syrup.
