
Melomakarona with no sugar at all
Ingredients for a full batch (about 40 small pieces)
For the dough:
– 200 g orange juice
– 280 g olive oil
– 600 g all-purpose flour
– 1/2 tsp baking soda
– 1/4 tsp cinnamon
– 1 pinch of clove
– zest of 1 orange
For the honey topping:
– Coarsely chopped walnuts (optional)
– Oros Machaira honey
Method:
In a deep bowl we mix the orange juice and the baking soda. We let them react and then add the olive oil. We add the herbs and spices and mix by hand.
We add the flour, continuing to mix gently by hand from the centre outwards, so that our dough does not become tough. We shape the melomakarona into small round balls and press them down with the palm of our hand.
We place the melomakarona on a sheet of baking paper.
We bake in a preheated oven at 180°C for 30 minutes, until they take on a dark golden colour. We let the melomakarona cool. We drizzle them with honey and sprinkle with the walnuts.
For the syrup: in the saucepan we heat 2 cups of honey and 2 cups of water with 1 cinnamon stick.
Don’t forget: Honey contains small amounts of minerals and vitamins, mainly of the B complex, which ensure the good function of the nervous system. Also, studies report that it may not raise blood sugar as quickly as other sweet products.
