No-bake cookies with quinoa, oats & honey

No-bake cookies with quinoa, oats & honey

  • Soak the dates in a cup of water for 10–15 minutes.
  • In a large bowl put the quinoa, the oats, the pumpkin seeds (once you have crushed them) and the almonds.
  • Remove the dates from the water and dry them, then blend them with a blender until the mixture becomes sticky.
  • Add the quinoa and oat mixture, the honey and the olive oil to the blender with the dates and mix well.
  • Shape the cookies and place them in a glass dish, having first laid down non-stick paper.
  • Leave them in the fridge for more than 2 hours so that the mixture settles, and enjoy.

Quinoa is a shrub whose seeds are consumed and it belongs to the category of pseudocereals. It is a wholegrain food while it does not contain gluten, therefore it is suitable for people who suffer from coeliac disease. It has high concentrations of iron, B-complex vitamins, magnesium, phosphorus, potassium, calcium, vitamin E and is an excellent source of antioxidant substances.

The cookies with quinoa and honey are an alternative and healthy option for a ‘quick’ breakfast. For lovers of sweets they are wholeheartedly recommended since the honey will ‘calm’ the cravings.
