
Chocolate pudding, the healthy way

Ingredients for 4 servings:
- 2 cups milk – low-fat or plant-based
- 1/8 tsp salt
- ¼ cup cocoa powder – 100%
- 1/3 cup honey
- ½ cup milk – low-fat or plant-based + 3 tbsp cornstarch
- ¾ tsp vanilla syrup
- Almonds, for garnish
- Cinnamon
tbsp: tablespoon tsp: teaspoon cup: cup 250 ml
Method:
- Heat the milk in a small saucepan with the salt, the cocoa powder and the honey.
- At the same time, in a small bowl mix the milk with the cornstarch until it dissolves well.
- When the milk is hot, add the mixture of milk and cornstarch and let it come to the boil. When it starts to boil, stir for 2 minutes. Simmer for another 1 minute and remove from the heat.
- Add the vanilla and stir.
- Place the mixture into 4 bowls and put them in the fridge. This makes the mixture thick. Leave in the fridge for a few hours or until the next day for a better result.
- Add almonds after cutting them in half and sprinkle with cinnamon
Dietitian’s Tip: Who said that dessert is forbidden when it is within the framework of a proper and balanced diet? Even more so when the dessert is made at home with pure and nutritious ingredients. Pudding is a refreshing dessert with many variations, of which the most “common” is the one with the addition of ripe avocado.
